New world pils

Verticale is a brand new beer similar in concept to Stivot. in theory its a traditional German Pilsner however it’s brewed with “new world” ingredients grown a little closer to home here in the US. The malt is grown just 3 hours away outside of Pocatello and the hops are American Noble versions of Citra. Simcoe, and Mosaic. These American Nobble versions are actually a byproduct of Cryo hop production. They contain more green leaf matter and less oil so they’re closer to European noble hops that would be used in a traditional Pilsner. A lot of these modern pilsners are hopped like an IPA or Pale Ale but are fermented with lager yeast. Instead we took a more traditional approach and only added these hops at the very beginning of the boil. This gives the beer a unique aroma and flavor that hints at these modern hops but you get the drinkability and dryness of a traditional pils. There are no hop oils to weigh on the palate. Verticale is Italian for “vertical” but also a somewhat obscure ski racing term for a 3 gate flush in slalom.
