Pacific Northwest Pilsner
PNW Pils is the first bier in what will be a series of traditional lager biers brewed with ingredients grown a little closer to home. The malt we used for this is a traditional German barley variety called Steffi that’s grown in Washington and malted by the fine folks at Cold Stream Malt and Linc Malt. The hops are a blend of HBC1134 and American Noble Cascade both grown in WA as well. We love 1134 and use it a lot. It’s bred to mimic the classic European noble varieties but with much better drought tolerance. American Noble Cascade is a unique product from Yakima Chief that’s actually the byproduct of Cryo hop production. It maintains the essence of Cascade but in a very low alpha form.
We utilized all the traditional lager bier brewing techniques that we’re capable of. Step mashing, biological acidification, no hop additions past 40 minutes left in the boil, long cold fermentation (coldest we’ve ever done) with a new yeast to us, and extended maturation at very cold temps. We used no finings or filtering in this beer as well.
Does it taste exactly like a Pils brewed with German ingredients? Nope! But that’s not the point. The Germans are using the ingredients grown close to home so we figured why not start doing the same. Hope you enjoy. Look for more biers of this ilk in the future.
