PARADISI

Single hop pale ale

Introducing Paradisi, our newest Single Hop Pale Ale, featuring a new experimental variety from Freestyle Hops in New Zealand. We used nothing but Paradisi for kettle, whirlpool, and dry hop additions in this Pale Ale. These single hop pale ales are not hopped as intensely as our 5% IPAs are. They’re meant to be a little more nuance with a slightly drier finish and lower overall hop oil intensity. They really do let the variety specific hop character shine so we can learn more about the hop and how it presents in the beer and evolves over time.

Paradisi is really unique and has some interesting qualities we really haven’t experienced in other hops from NZ. There wasn’t a lot of info out there on this one so we didn’t really know exactly what we were going to get. Admittedly we weren’t that impressed when we opened the bag but we’ve found that doesn’t always translate to how the hop presents once it’s in the beer. And sure enough that was the case. Even at our typical lower dry hopping rate this hop really jumps out of the glass. We’re getting some mango, and guava, with citrus that has evolved from lime in the tank to now more grapefruit in package. The one really interesting note is the dank or resinous character in the beer. Usually this character expresses itself as more diesel or machine oil notes in NZ hops but not Paradisi. Of the beers we’ve made recently it’s probably the one that tastes most like weed which is fascinating. If Columbus was grown in New Zealand I feel like this is how it would express itself. It’s super interesting and offers a lot of depth in a single hop beer. We have a few more bags to play with but it’s all gone until 2027 harvest becomes available next summer.
