Fresh Hop Double IPA
Our Mosaic Single Hop Double IPA returns but this time with a Fresh Hop twist. This is our second Fresh Hop offering this fall and we chose a completely different approach this time around. We’re still new to this and it turns out there are a bunch of different ways to make a “Fresh Hop” beer depending on who you talk to so we thought for each one (there will be two more) we’d take a slightly different approach.
Simcoe was dry hopped with super fresh, wet, unkilned Citra hops right before packaging but all the other hop additions were 2022 harvest pellets. This single hop Mosaic is a different approach. We again took a trip up to Wilder, ID to see the amazing folks from J ackson Hop Farms to grab some fresh off the bine, unkilned, wet mosaic. We rushed back and added 10lb/bbl of the wet hops to the hop back later that same day. However that same trip we also grabbed 20 lbs of freshly kilned 23 Harvest Mosaic right off the cooling room floor. After the first dry hop with our amazing WA grown 22 Mosaic pellets we added a second dry hop of the freshly kilned 23 Mosaic in the brite tank.
The results are pure Mosaic saturation. Dank mango, pineapple, citrus flavors and aromas abound with that quintessential fresh hop herbaciousness tying it all together. Did we mention Dank?
Most of our Fresh Hop offerings this year will be a bit more WC leaning with leaner bodies, a bit more bitterness, and a touch more clarity as this seems more appropriate for this style of beer.
