WEST COAST IPA

It’s the year 2000. You’ve just survived Y2K, your phone probably flips, and Third Eye Blind is ruling the airwaves. You can still afford to live in a ski town and it even snows in December. Followers are definitely a bad thing and no one is trying to reach you about your car’s extended warranty. Your IPA is probably dark orange, crystal clear, bitter AF, and smells like pine, resin, and earth ( if you can even find one that’s not oxidized.) There are no hops that smell like coconuts, mango, jackfruit, and papayas. But a young brewer named Vinnie Cilurzo becomes obsessed with a new variety called YCR 14, builds a beer around it called Pliny, and saves it from being discarded. That year YCR 14 is officially released as Simcoe and the rest is history. It really was the first modern/sexy US hop to be released and it helped push the IPA style to the insanity it has become today. I’ve wanted to brew this beer for a few years and since 2025 is the 25th anniversary of the release of Simcoe it seemed like now was as good a time as ever. We reached out to our best buds in beer, Cellarmaker Brewing and New Image brewing to see if they wanted to collaborate with us on this one. We used every form of Simcoe we could get our hands. T90, Cryo, Co2 extract, Dynaboost, Hyperboost, and whole leaf were layered in staggering quantities at every opportunity. The best part is the T90 and Cryo lots were the hand selected lots from Cellarmaker and New Image.
