SINGLE HOP IPA
HBC586 is probably the most exciting hop to come out of the Pacific Northwest since Mosaic was released in 2012. When we first smelled 586 in 2019 we were blown away by it’s explosive aromas right out of the bag. It was unlike anything we’d ever smelled in a US hop. Intense tropical fruit like guava and mango along with sweet peach and apricot with an underlying herbal/sulfur component that made it completely unique. It’s a hop that Divi was originally designed around however 2020 and 2021 harvest years were not kind to 586. It’s a late pick variety and the wildfire smoke in the northwest stunted it’s oil development and it was just too herbal. Thankfully 2022 was a pretty smoke free year in Yakima and this hop is now shining again. We used nothing but 2022 Harvest 586 from start to finish in this beer and it’s intense punchy fruit character really comes through. We also used a different dry hopping technique on this beer to create a clearer finished product which we think works best to showcase this hop variety. As with all our hoppy beers the goal is the best overall hop expression and we think 586 expresses itself the best in a beer with less haze. Love to know what everyone thinks of this as it’s an incredibly unique hop we’re really excited about.
