MExican Lager
Introducing El Provo. A Mexican Lager we brewed for Slackwater River Woods to celebrate their first anniversary. Instead of taking the easy route and using some flaked corn or even corn syrup like the big boys we decided to do a cereal mash with some corn grits for this beer. Our brewhouse has the ability to do it so we figured why not. Cereal mashing entails mixing unmalted grain, in this case corn, and boiling it with a small amount of malt and then combining that with the rest of the mash. This method converts the starch in the unmalted grain into fermentable sugars. However it also adds a depth of flavor and complexity. This is a very simple beer but we wanted to give it a little more flavor than your standard industrialized version. A small late addition of some Crystal hops from OR give it the faintest hint of lime as well. Stoked on how this turned out. Look for a cereal mashed rice lager here in a few weeks.
You can find this at all Slackwater locations. We have one keg of it here and a limited number of cans. Get it while you can.
