As far as we know we’re only the third brewery in the US to use Australian grown Cascade. Not a lot of this hop is grown and most of it doesn’t leave the country of Australia. We heard some good things about it so we thought we’d give it a whirl After nothing but this AUS Cascade in the kettle, whirlpool, and first dry hop but weren’t really feeling the results at that point. It was nice but lacked a little punch so we added some additional Galaxy in a second dry hop and boy does it pop now. We’re getting lots of passionfruit, lemon, and additional citrus notes, with some underlying pine and a bit of grassyness. Not sure we’ll ever be able to use this hop again so get it while you can.
